Potato Flat Bread

  • 3 dl potato flakes or 1.5 dl mashed potato flour mix
  • 4 dl water
  • 50g margarine or butter, melted
  • ½ tsp salt
  • 1 dl barley flour
  • 2 dl wheat flour
Heat the oven to 225°C. Mix the potato flakes with lukewarm water. Add the melted butter, salt and flour. Knead the dough into a bar shape and slice into 7-8 pieces. Tap the pieces into ½ cm thick flat breads. Tick the bread with a fork and bake in the oven for about 15 minutes. The Rieskas taste best when still warm.

You may substitute the potato flakes and water with about 5 dl of mashed potatoes.
